  1. Cut the chicken into ½ inch pieces.
  2. Slice zucchini into rounds and semi-circles.
  3. Heat oil in small frying pan or wok.
  4. Add salt and pepper chicken to taste, and add garlic.
  5. Add the rest of the ingredients and bring to a slight boil.
  6. Cook until chicken is no longer pink and zucchini is tender, but still crisp.
  7. Serve with rice or flat bread.
